Tasty Tuesday - Tacos!


Ok, I'm sure you all know how to make tacos so I'm not going to post a recipe. I just wanted to add a suggestion for tacos.

When we have taco night, we make rice - LOTS of rice, and about 1/2 lb of ground beef (there are 2 adults and 2 toddlers eating in our home). Then we throw in some shredded cheddar cheese, lettuce, tomato, and whatever else we have lying around that looks like it might work in a taco. But the point is the rice. Rice is one of the cheapest things you can buy and it is a GREAT filler for tacos! In fact, since I started using rice in my tacos, I hardly find one appealing without rice!

This has really helped our budget since 2 lbs of meat is quite a bit more expensive than 1/2 lb of meat. It's healthier, because we're not eating as much fat. And, like I may have mentioned, it's delicious! :)

We've considered trying out "rice tacos" - that is, seasoning the rice with taco seasonings and skipping the meat all together. Has anyone tried that?? I've considered corn as well, but have not yet given that a whirl.

What things do you put in your tacos to stretch the meat?

MEREDITH: Sorry! Those are not my tacos, but I SURE wish they were! I just pull some of my images from Google and unfortunately this is one of those. But I would LOVE a tortilla recipe if anyone has one!

I just made my last set of taco's or more like buritto's, with...a tortilla, refried beans, rice, 1/2 piece of fat free cheese and salsa. I make them all up and wrap in reynolds wrap and have them for work! They are soooooo good. (I use my rice a roni that I get for free after coupon!) So it's a cheap, low fat/calorie meal that is filling! I have put chicken in, but to be honest, I don't miss it when it's not in them!
