Smoky Corn Chowder

1/ c. chopped yellow onion
4 Tbsp. butter or margarine
1/4 c. all-purpose flour
1 1/4 tsp. salt
1/4 tsp. pepper
4 c. milk
1 17-oz. can whole-kernel corn, drained (I'm sure you could use frozen as well)
12 or 16 oz. pkg. smoked sausage links, drained and sliced
In a saucepan, saute onion in butter until tender, but not brown. Stir in flour, salt and pepper. Add milk all at once. Bring to a boil, stirring constantly until thick and bubbly, about 1 minute. Stir in corn and sausage. Reduce heat; simmer 10 minutes. Makes 6 servings.

I'm glad you posted the recipe. I had inteneded to make it because Abigail liked it so much, but I lost the recipe! I even have all of the ingredients on hand, so we'll be having it for dinner some time this week.

Oh I love corn chowder, but my recipes have always taken way more time than this -- I love the quick recipe. Yum! I think I may be making some soup for dinner tomorrow.
