Tasty Tuesday . . . Smoky Corn Chowder

We had a Ladies' Soup Cook Off at my church on Saturday. It was a good time. We got to try out various different soups and vote on our favorite. Well, I was excited when the soup that I chose as my favorite won first prize. It was delicious! So I thought I would share the recipe with you today. Normally, I am not a fan of chowder-type soups, but this one was so good!

Smoky Corn Chowder
by: Carol Stephens

1/ c. chopped yellow onion
4 Tbsp. butter or margarine
1/4 c. all-purpose flour
1 1/4 tsp. salt
1/4 tsp. pepper
4 c. milk
1 17-oz. can whole-kernel corn, drained (I'm sure you could use frozen as well)
12 or 16 oz. pkg. smoked sausage links, drained and sliced

In a saucepan, saute onion in butter until tender, but not brown. Stir in flour, salt and pepper. Add milk all at once. Bring to a boil, stirring constantly until thick and bubbly, about 1 minute. Stir in corn and sausage. Reduce heat; simmer 10 minutes. Makes 6 servings.

I'm glad you posted the recipe. I had inteneded to make it because Abigail liked it so much, but I lost the recipe! I even have all of the ingredients on hand, so we'll be having it for dinner some time this week.

Oh I love corn chowder, but my recipes have always taken way more time than this -- I love the quick recipe. Yum! I think I may be making some soup for dinner tomorrow.

Sounds great. I love that you put sausage in it; I've never seen that before.

I am interested in the Ladies Soup Cookoff that you posted. Would you please give me a few details about it? I mentioned it to the head of our ladies group at church and we want to do it for next month. Email me at raggmopp@grm.net
